Beef and Bread

Last summer I was a Portuguese-American for a day when I joined a friend who’d invited me to the the annual Festa do Espírito Santo, or Holy Ghost celebration, in Benicia, California, a sunny town lapped by the waters of the Carquinez Strait about 40 miles northeast of San Francisco.

Picnic tables filled the room; paper plates marked place settings; ceiling fans whirred futilely. In an open kitchen, five cauldrons sat on burners a few feet above the floor. These held sopas, a traditional stew made in this case from 2,850 pounds of beef (donated by local ranchers) simmered for 12 hours with mugsful of onions, tomatoes, spices, wine, and water. Groups of people filed into the room and quickly occupied the 500 places for the 10:30 a.m. seating, the first of the day. Once the crowd was arranged, a coordinator signaled the men in the kitchen that it was time for the sopas. Apron-clad servers carried blue enamel washtubs, some brimming with slices of bread soaked in cooking juices and others piled with shredded meat, to tables. We spooned bread and liquid, then meat, onto plates. The aromatic flavors—especially cinnamon, allspice, and cumin—lent an exotic, sweet-spiciness to the dish; bread soaked up the rich juice.

Rubatex Neoprene Before the first seating, a parade, including marching bands and a queen clad in a velvet cape and jeweled crown, marched to mass at St. Dominic’s church across town. As the day progressed, three more seatings—the last at 6 p.m.—allowed spots at the tables for both new arrivals and those waiting for seconds.

Rubatex Pipe Despite Portuguese ties, Festa do Espírito Santo is a reenactment of a 13th-century observance started in Italy to commemorate Elizabeth of Hungary, who was canonized on May 26, 1235, a Pentecost Sunday. The fest reached the Azores, and the Portuguese adopted it. Today the event is largely unknown there; but thanks to immigration, it’s big in U.S. Azorian communities, including ones in New Bedford, Massachusetts, Newark, New Jersey, and Honolulu—all of which host fests. In Northern California, Holy Ghost is a mini season with parties every Sunday between Easter and August.

The control group received only the meal, while the other group received the meal with 0.75 grams of Phase 2® mixed in with the mashed potatoes.
My friend, a Mexican-American who’s lived in Benicia for decades and feels strong ties to his Portuguese neighbors, says this party was tamer than in years past: “The festival started Friday night and continued through Sunday. Cows were auctioned off, and there was dancing all three nights.”
